Orange Chicken
Nothing is better than after a long day throwing in a bag of trader joes orange chicken in the oven and calling it a day. Once i took a look at the laundry list of ingredient i was SHOCKED! There had to be a better way to make this while still keeping it easy. I hope you enjoy my healthier version of Orange Chicken.
Ingredients:
(this makes multiple servings so cut it down to whatever works for you)
3 pounds of Chicken Breasts, cut up into small 1” sections, smaller if you like extra crunchy pieces.
For the coating
1.5 c of flour
4 tbsp of arrowroot powder
3 tsp of salt
3 tsp of baking powder
Avocado oil spray
For the sauce
Juice from 3 large oranges
4 tbsp Rice wine vinegar
3 tbsp of arrowroot powder
2.5 tbsp of Coconut Aminos
2.5 tbsp of Tamari sauce
2 tbsp of crushed garlic
2 tbsp of sugar
3 tsp of ginger
How to make:
First start by preheating your oven to 400°.
After that I started my rice, which is optional.
Then I diced my chicken up but didn’t pat it dry. I wanted to use that to help the mixture stick to the chicken because I was in a hurry. You can use an egg bath if you want to get extra fancy with the cheese whiz but i wanted quick and easy. I mixed together all my dry ingredient for the coating and made sure to mix thoroughly before adding my chicken. I added my coating to a bag, dumped the chicken in and shook it up making sure each piece is coated nicely. I put a piece of unbleached parchment paper and laid each piece of chicken down so they were over lapping. I sprayed down the chicken on one side and baked for 10 mins.
Then I flipped each piece over, sprayed it down again and cooked for another 10 mins.
While that’s cooking you can make the sauce. I used a bigger pot because i wanted to be able to dump the chicken in the same dish and be able to mix it, remember we are sticking to the easy theme here. In your pot go ahead and mix all ingredients together. Mix it together and turn the heat on to medium. Don’t go too high because it cooks FAST. once its nice and thick go ahead and turn off the heat. Once the chicken is done throw it in the pot and mix it together.
That’s it! You are done! This took me a little over a half an hour and made enough for my family of 3, dinner for 2 nights which I’m all about! Hope you enjoy!
